Black Bean and Mango Salad
1 can black beans
2 cups diced mango
1 cup sweet red bell pepper, diced
6 green onions, thinly sliced
1/4 cup cilantro leaves, chopped
1/4 cup fresh lime juice
1 tablespoon olive oil
1 seeded jalapeno pepper, minced
Salt to taste
Combine ingredients, toss and serve (or if desired, chill before serving). Recipe serves six.
